Monster Eyeball Cookies

Ingredients

  • 1 1/2 cups brown sugar
  • 1/2 cup salted butter, softened
  • 2 tsp vanilla extract
  • 2 large eggs
  • 3/4 tsp baking soda
  • 2 1/2 cups all-purpose flour
  • green food colouring (I used the gel)
  • strawberry jam
  • candy eyeballs

Instructions

  • Preheat the oven to 350°F. Line baking sheets with parchment paper or a silicone baking mat.
  • In a large bowl, beat together the sugar, butter and vanilla until light and fluffy. Add in the eggs one at a time, beating well after each addition. 
  • Mix in the baking soda. Add in the flour, and mix until fully incorporated. Mix in enough colouring to get your desired colour.
  • Using a medium cookies scoop (or your hands), scoop the batter onto the baking sheet, keeping them around 1-2 inches apart. 
  • Bake in the preheated oven for 12 minutes, or until the cookies have spread and cracked on top. Allow to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  • Add around 1/4 tsp of strawberry jam to the centre of each cookie. Place a candy eyeball on top of the jam and press down.

Notes

  1. Any red jam works. The large candy eyeballs are best to use in this recipe.
  2. Store in an airtight container for up to 5 days.
