Veggie Buddha Bowl

Super simple Veggie Buddha Bowl made with spinach, cauliflower, broccoli, bell peppers and, of course, avocado. Perfect for lunch or dinner.

Ingredients

  • 2 cups baby spinach washed
  • 2 small bell peppers diced (I used red and yellow)
  • 1/2 cup cauliflower, chopped
  • 1/2 cup broccoli, chopped
  • 1/2 large avocado, thinly sliced
  • 1 tsp hemp hearts
  • 3 Tbsp caesar salad dressing

Instructions

  • Layer all of the vegetables in a bowl. Sprinkle with hemp hearts and top with salad dressing.
