- 1/2 cup salted butter, softened
- 1 cup granulated sugar
- 1 cup applesauce
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp cloves
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
Preheat the oven to 350˚F. Lightly grease an 8x8 inch square pan and set aside.
In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add in the applesauce and mix until fully combined.
In a separate bowl, mix together the flour, baking soda, cinnamon and cloves. Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the cranberries and pecans.
Pour the batter into the prepared pan, and bake in the preheated oven for 40 minutes, or until a toothpick inserted comes out clean.
