Ingredients

  • 1/2 cup salted butter, softened
  • 1 cup granulated sugar
  • 1 cup applesauce
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp cloves
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped

Instructions

  • Preheat the oven to 350˚F. Lightly grease an 8x8 inch square pan and set aside.
  • In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add in the applesauce and mix until fully combined.
  • In a separate bowl, mix together the flour, baking soda, cinnamon and cloves. Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the cranberries and pecans.
  • Pour the batter into the prepared pan, and bake in the preheated oven for 40 minutes, or until a toothpick inserted comes out clean.
