Vegan Coconut Raspberry Ice Cream
This Vegan Coconut Raspberry Ice Cream is dairy free and made with fresh raspberries. A nice and refreshing dessert recipe perfect for summer.

Ingredients

cans
full fat coconut milk
(400 ml each), chilled
1/3
cups
powdered sugar
2
tsp
pure vanilla extract
6
oz
fresh raspberries

powdered sugar
Instructions
Combine the coconut milk, 1/3 cup powdered sugar and vanilla in a blender, and puree until smooth.
Freeze the mixture in your ice cream maker according to manufacturer’s instructions.
Meanwhile, blend together the raspberries and 2 tablespoons of powdered sugar in a blender until smooth. Strain out the seeds.
Slowly pour the raspberries mixture in the already churning ice cream.
Place the ice cream into an airtight container and freeze until ready to serve.
