Vegan Coconut Raspberry Ice Cream

This Vegan Coconut Raspberry Ice Cream is dairy free and made with fresh raspberries. A nice and refreshing dessert recipe perfect for summer.

Ingredients

  • 2 cans full fat coconut milk (400 ml each), chilled
  • 1/3 cups powdered sugar
  • 2 tsp pure vanilla extract
  • 6 oz fresh raspberries
  • 2 Tbsp powdered sugar

Instructions

  • Combine the coconut milk, 1/3 cup powdered sugar and vanilla in a blender, and puree until smooth.
  • Freeze the mixture in your ice cream maker according to manufacturer’s instructions. 
  • Meanwhile, blend together the raspberries and 2 tablespoons of powdered sugar in a blender until smooth. Strain out the seeds. 
  • Slowly pour the raspberries mixture in the already churning ice cream.
  • Place the ice cream into an airtight container and freeze until ready to serve.
