Chocolate Peanut Butter Creamy Chia Pudding

This Chocolate Peanut Butter Creamy Chia Pudding is sweetened with dates, and can be made vegan. Blended together to make it smooth and creamy.

Ingredients

  • 2 cups milk of choice
  • 1/2 cup chia seeds
  • 1/4 cup creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 3-4 pitted dates (or prunes)
  • 1/2 tsp pure vanilla extract

Instructions

  • Whisk together the milk and chia seeds in a medium bowl. Add in the peanut butter, cocoa powder, dates (or prunes) and vanilla. Stir a couple of times and place in the fridge overnight.
  • In the morning, scrape the contents into a food processor, and process until smooth.
  • Portion into bowls and top with desired toppings. Serve right away, or store in an airtight container in the fridge until ready to serve.
