Coconut, Cranberry and Pumpkin Seed Microwave Oatmeal

I make this Coconut, Cranberry and Pumpkin Seed Microwave Oatmeal recipe so much! Gluten free and can be made vegan, this makes a nice and easy breakfast.

Ingredients

  • 1 medium banana, mashed
  • 1/2 cup rolled oats
  • 1/2 cup milk of choice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tsp pumpkin seeds
  • 2 tsp dried cranberries
  • 2 tsp sweetened coconut

Instructions

  • In a microwave safe bowl, mix together the banana, oats, milk, cinnamon and vanilla until fully combined. 
  • Microwave for 3 minutes, stiring halfway through.
  • Add the pumpkin seeds, cranberries and coconut. Mix in and enjoy!
