Apple Banana Bread

This is the perfect banana bread for the first day of fall. Made with apples, bananas and walnuts for a nice crunch, this apple banana bread makes a good snack.

Ingredients

  • 1/2 cup salted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 Tbsp plain yogurt
  • 2 medium ripe bananas, mashed
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 medium apples, shredded
  • 1/2 cup walnuts, chopped (optional)

Instructions

  • Preheat the oven to 350˚F. Lightly spray a loaf pan and set aside.
  • In a large bowl, cream together the butter and sugars until light and fluffy. Mix in the eggs one at a time until fully incorporated. Add in the yogurt, banana and vanilla, and mix until fully combined.
  • In a separate bowl, mix together the flour, baking powder, baking soda and cinnamon. Slowly add in the dry ingredients to the wet ingredients until just combined.
  • Fold in the apples and walnuts. Pour the batter into the prepared pan and bake in the preheated oven for 1 hour, or until a toothpick inserted in the center comes out clean.
