Peanut Butter and Banana Chocolate Chip Muffins

- 2 medium bananas, ripe
- 1/2 cup creamy peanut butter
- 2 Tbsp honey
- 1 tsp vanilla extract
- 2 Tbsp light brown sugar, packed
- 1 large egg
- 1/3 cup whole wheat flour
- 1/3 cup rolled oats
- 1/3 cup chocolate chips
Preheat the oven to 350°F. Lightly spray a muffin pan with cooking spray and set aside.
In a large bowl, mash the bananas. Mix in the peanut butter, honey, vanilla and sugar. Add in the egg and mix until fully combined.
Slowly mix in the flour and oats until fully incorporated. Fold in the chocolate chips.
Scoop batter evenly into the prepared muffin pan.
Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean.
