Easy Mini Magnum Bars

Ingredients

  • 2 cups vanilla ice cream, melted
  • 1/3 cup chocolate chips
  • 5 tsp coconut oil

Instructions

  • Insert wooden sticks into a mini ice cream bar silicone mold. Place the mold on a small tray.
  • Pour the melted ice cream into the molds. Place in the freezer to harden overnight.
  • When the ice cream has hardened, add the chocolate chips and coconut oil into a small microwave safe bowl. Microwave in 30 second intervals, mixing after each interval until smooth. Allow to cool for around 5 minutes.
  • Line a baking sheet with parchment paper.
  • Remove the ice cream bars from the silicone molds and quickly dip the bars one at a time into the melted chocolate.
  • Place the ice cream bars on the prepared baking sheet and immediately place into the freezer until the chocolate has hardened.
  • Store in the freezer until ready to serve.
