Cowboy Cookie Bars

Easy Cowboy Cookie Bars recipe. Made with shredded coconut, pecans, chocolate chips and white chocolate chips, this decadent dessert makes a great snack too

Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup old fashioned oats
  • 1/2 cup shredded coconut
  • 1/3 cup pecans, chopped

Instructions

  • Preheat the oven to 350˚F. Lightly spray a 9 inch square baking pan with cooking spray and set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla.
  • In a separate bowl, mix together the flour, cinnamon, salt and baking soda.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the chocolate chips, white chocolate chips, oats, coconut and pecans until combined. Spread evenly onto the prepared pan.
  • Bake in the preheated oven for 25-30 minutes, or until the sides are lightly brown. Allow to cool completely before cutting into squares.
