- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup unsalted butter
- 1 large egg
- 1/2 cup sour cream
- 1/2 cup dried cranberries
- 1 1/2 tsp orange rind, grated
Preheat the oven to 400˚F. Line a baking sheet with parchment paper and set aside.
In a large bowl, combine the sugar, flour, baking powder and baking soda. Cut in butter until the mixture looks like oatmeal (or fine crumbs)
In a small bowl, whisk together the eggs and sour cream. Add it to the flour mixture, mixing until fully incorporated. Fold in the cranberries and the grated orange rind.
Form a ball with the batter, and press into a lightly floured surface to form an 8 inch circle. Using a sharp knife, cut into 8 triangles. Place these triangles on the prepared baking sheet.
Bake in the preheated oven for 15-17 minutes, or until the edges are golden brown. Allow to cool on wire racks.
- Make sure the butter is cold, or even frozen. This ensures a flakey texture.
