Crunchy Peanut Butter Chocolate Truffles

Ingredients

  • 1/2 cup salted butter, softened
  • 2 cups powdered sugar
  • 1/2 cup crunchy peannut butter
  • 5 graham cracker sheets, finely crushed
  • 1 1/2 cups chocolate chips
  • 3 tsp coconut oil

Instructions

  • Line a cookie sheet with parchment paper and set aside.
  • In the bowl of a stand mixer, cream together the butter, powdered sugar, peanut butter and graham cracker crumbs until fully combined.
  • Roll into balls and place on the prepared cookie sheet. Place in the freezer for at least 20 minutes.
  • In a microwave safe bowl, melt the chocolate and coconut oil in the microwave in 30 second intervals, mixing until smooth.
  • Dip the peanut butter balls in the chocolate then return to the cookie sheet.
  • Place them in the fridge to harden, around 20 minutes. Store in an airtight container in the fridge.
