- 1/2 cup salted butter, softened
- 2 cups powdered sugar
- 1/2 cup crunchy peannut butter
- 5 graham cracker sheets, finely crushed
- 1 1/2 cups chocolate chips
- 3 tsp coconut oil
Line a cookie sheet with parchment paper and set aside.
In the bowl of a stand mixer, cream together the butter, powdered sugar, peanut butter and graham cracker crumbs until fully combined.
Roll into balls and place on the prepared cookie sheet. Place in the freezer for at least 20 minutes.
In a microwave safe bowl, melt the chocolate and coconut oil in the microwave in 30 second intervals, mixing until smooth.
Dip the peanut butter balls in the chocolate then return to the cookie sheet.
Place them in the fridge to harden, around 20 minutes. Store in an airtight container in the fridge.
