Ingredients
1 3/4cupall-purpose flour
1cupgranulated sugar
1tspbaking soda
1tspsalt
1/2cupoil
1cupwater
1Tbspvanilla extract
1Tbspwhite vinegar
Instructions
Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
In a medium bowl, mix together all of the ingredients until smooth.
Divide evenly in the prepared muffin cavities and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Notes
I use avocado oil in this recipe, but any neutral oil works.
