Vanilla Yogurt Bread

Easy Vanilla Yogurt Bread recipe. This quick loaf makes a simple lightly sweet, nut free snack or tea time treat.

Ingredients

  • 1 3/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 Tbsp vanilla extract
  • 2/3 cup vanilla yogurt
  • 1/4 cup oil
  • 1/4 cup coconut milk

Instructions

  • Preheat the oven to 350˚F. Lightly spray a loaf pan with cooking spray and set aside.
  • In a medium bowl, mix together the flour, sugar, baking powder, baking soda and salt.
  • In a separate bowl, mix together the eggs, yogurt, oil and milk until fully combined. Slowly mix the wet ingredients into the dry ingredients until fully incorporated.
  • Pour the batter into the prepared pan and bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Allow to cool for around 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

I use avocado oil, but any neutral oil works with this recipe.
