Sweet and Spicy Teriyaki Chicken

Ingredients

  • 2 green onions
  • 1 Tbsp avocado oil
  • 20 oz boneless, skinless chicken breasts, diced
  • 1 tsp fresh ginger, minced
  • 1/4 tsp red pepper flakes
  • 3/4 cup rice
  • 2 tsp soy sauce
  • 1 1/4 cup water
  • 2/3 cup Teriyaki sauce, divided
  • 8 oz broccoli florets
  • 1 tsp sesame seeds

Instructions

  • Slice the green onions and separate the green and white portions Set aside.
  • In a large saucepan, heat the oil over medium heat. Add in the diced chicken and stir until the chicken browns, around 4 minutes.
  • Mix in the white portions of the green onion, ginger and red pepper flakes.
  • Add in the rice, soy sauce and water. Stir and bring to a boil.
  • Once boiling, reduce to a simmer. Cover and cook for around 10 minutes.
  • Uncover pot and add in 1/3 cup of teriyaki sauce and broccoli. Cover, and cook until the broccoli is tender and water is fully absorbed, around 6 minutes.
  • Divide into bowls and garnish with green onions, sesame seeds and remaining teriyaki sauce.
