Leftover Doughnut Bread Pudding

Ingredients

  • 6 cups leftover doughnuts, cut into 1 inch chunks
  • 3 Tbsp salted butter, melted
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350ºF.
  • Lightly spray an 8x8 square baking pan with cooking spray. Add in the doughnut chunks. Pour the melted butter on top and mix to combine.
  • In a medium bowl, mix together the eggs, milk, sugar, cinnamon and vanilla.
  • Pour the milk mixture over the doughnuts. Allow to sit for around 5 minutes so that the doughnuts absorb the liquid.
  • Cover the baking pan with foil and bake in the preheated oven for 25 minutes. Remove the foil and return to the oven for an additional 25 minutes.
