- 2 Tbsp oil
- 1 lb sweet potatoes, peeled and diced into 1 inch cubes
- 1 large onion, diced
- 2 large carrots, peeled and diced
- 3 cloves garlic, minced
- 1 tso fresh grated ginger
- 1 Tbsp Sambal Hot Sauce
- 1/4 tsp turmeric
- 1/2 tsp salt
- 3 1/2 cups vegetable broth
- 1 1/2 cups dry lentils
- 1 (400mL) can coconut milk
In a large saucepan, heat the oil. Once the oil is hot, cook the sweet potatoes, onion and carrots until onions are fragrant.
Add in the garlic, ginger, hot sauce, turmeric and salt. Cook for around 2 minutes.
Add in the vegetable broth and the lentils. Bring to a boil the reduce heat. Cover and allow to simmer for around 5 minutes.
Add in the coconut milk and cook until the lentils are tender.
- I use avocado oil, but any neutral oil works.
- Store the soup in the fridge for up to 5 days.
