Cookies and Cream Pancakes

- 2 cups all-purpose flour
- 4 tsp baking powder
- 1/4 tsp salt
- 1 Tbsp granulated sugar
- 1 1/2 cups milk
- 1/2 cup Greek yogurt
- 2 large eggs
- 1 tsp pure vanilla extract
- 8 Oreos, chopped
Toppings
- cookies & cream ice cream
- Nutella
In a medium bowl, mix together the flour, baking powder, salt and sugar. Add in the milk, yogurt, eggs and vanilla extract. Mix until smooth.
Fold in the crushed Oreos.
Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/3 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.
Top with ice cream and melted butter. Enjoy!
