Brussels Sprouts and Gnocchi

Ingredients

  • 3 Tbsp avocado oil
  • 1 lb brussels sprouts, trimmed and halved
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 tsp red pepper flakes
  • 6 Tbsp salted butter
  • 500 g store bought gnocchi
  • 1/2 tsp honey
  • 1/4 cup Parmesan cheese, shredded

Instructions

  • Heat the oil in a large skillet over medium-high heat. Add in the brussels sprouts and cook for around 2-3 minutes. Add in the salt, pepper and red pepper flakes. Cook for an additional 3 minutes. Transfer to a plate and set aside.
  • In the same skillet, melt the butter. Add in the gnocchi and cook until they begin to brown, around 2-4 minutes.
  • Mix in the brussels sprouts. Stir in the Parmesan and enjoy!
