Chicken Taco Soup

Ingredients

  • 1 Tbsp oil
  • 1 medium onion, diced
  • 2 1/2 Tbsp taco seasoning
  • 2 cups chicken broth
  • 1 1/2 cups shredded cooked chicken
  • 2 (14 oz) cans diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed

Toppings

  • sour cream
  • cheese
  • lime slices

Instructions

  • In a large saucepan, heat the oil.
  • Cook the onion in hot oil until fragrant, around 2-3 minutes.
  • Add in the taco seasoning and cook for around 1 minute.
  • Mix in the chicken broth , shredded chicken, diced tomatoes, black beans and kidney beans. Allow to simmer for around 20 minutes, stirring occasionally.
  • Ladle into bowls and top with desired toppings.
