- 1 Tbsp oil
- 1 medium onion, diced
- 2 1/2 Tbsp taco seasoning
- 2 cups chicken broth
- 1 1/2 cups shredded cooked chicken
- 2 (14 oz) cans diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
Toppings
- sour cream
- cheese
- lime slices
In a large saucepan, heat the oil.
Cook the onion in hot oil until fragrant, around 2-3 minutes.
Add in the taco seasoning and cook for around 1 minute.
Mix in the chicken broth , shredded chicken, diced tomatoes, black beans and kidney beans. Allow to simmer for around 20 minutes, stirring occasionally.
Ladle into bowls and top with desired toppings.
