Glazed Lemon Blueberry Blended Baked Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 medium banana
  • 1 tsp chia seeds
  • 1/2 cup oat milk
  • 10 blueberries

Glaze

  • lemon zest
  • 1 Tbsp powdered sugar
  • 1 tsp lemon juice

Instructions

  • Preheat the oven to 400˚F.
  • In a small blender, add in the oats, baking powder, banana, chia seeds and milk. Pulse until smooth.
  • Pour the batter into a ramekin. Top with the blueberries.
  • Bake in the preheated oven for 20 minutes.
  • Meanwhile, in a small bowl, mix together the glaze ingredients until smooth.
  • Once the oats are done, pour the glaze over top. Allow to cool slightly and enjoy!

Notes

  1. Best served immediately.
  2. Try switching out the blueberries for other berries.
