Easy Protein Pancakes Bites

Ingredients

  • 1 1/4 cups protein pancake mix (I used Kodiak Cakes Flapjack and Waffle Mix)
  • 1 cup water
  • desired toppings (mini chocolate chips, sprinkles, fruit, etc..)

Instructions

  • Preheat the oven to 350°F. Lightly spray a mini muffin pan with cooking spray and set aside.
  • In a medium bowl, mix together the pancake mix and the water until just combined.
  • Divide evenly into 20 cavities in the prepared muffin pan and top with desired toppings.
  • Bake in the preheated oven for 7-8 minutes.

Notes

  1. For meal prepping: store in an airtight container in the fridge or a freezer bag in the freezer. When ready to eat, microwave for around 10-15 seconds until warm.
  2. I used Kodiak Cakes Flapjack and Waffle Mix.
