Pour the milk and vinegar in a small bowl, and let stand for 5 minutes to “sour”.
Preheat the oven to 400˚F. Lightly grease a donut baking pan.
In a medium bowl, combine the flour, sugar, baking powder, baking soda, nutmeg and cinnamon.
In a large bowl, mix together the eggs, maple syrup, butter and “sour” milk.
Slowly add the dry ingredients to the wet ingredients, mixing until fully incorporated.
Spoon the batter into the prepared baking pan, filling each cavity around half full. Bake for around 12 minutes or until golden brown.
In a small saucepan, melt the chocolate chips and coconut oil on medium heat, continually stirring until fully melted. Allow to cool slightly.
Dip the cooled donuts in the chocolate. Place on wire racks until chocolate has hardened.
