Maple Oatmeal Banana Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup maple and brown sugar instant oatmeal
  • 1 tsp baking soda
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 cup salted butter, softened
  • 2 large eggs
  • 2 medium ripe bananas, mashed
  • 1 tsp maple syrup

Instructions

  • Preheat the oven to 350˚F.
  • In a medium bowl, combine flour, oatmeal and baking soda.
  • In a separate bowl, cream together the butter and sugars until light and fluffy. Beat in the eggs, banana and maple syrup.
  • Slowly mix in the flour mixture to the wet ingredients until fully incorporated.
  • Pour the batter into a lightly sprayed loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean. Let cool on wire rack.
