Penne Alla Vodka

- 16 oz penne pasta
- 2 Tbsp salted butter
- 1 cloves garlic
- 1/2 tsp crushed red pepper flakes
- 1 (14 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 1/4 cup vodka
- 1 cup heavy cream
- 3/4 cup Parmesan cheese, grated
- salt and pepper to taste
- 1/4 tsp garlic powder
Cook the pasta in salted water according to package directions. Drain and set aside.
Meanwhile, in a large skillet, melt the butter over medium heat. Add in the garlic and red pepper flakes and cook until garlic is fragrant.
Place the diced tomatoes and tomato sauce in a food processor and puree until smooth. Pour the sauce into the skillet.
Mix in the vodka and allow to simmer for around 10 minutes.
Add in the heavy cream and Parmesan, and mix until fully incorporated. Allow to simmer until thickened, around 5 minutes. Mix in the salt, pepper and garlic powder. Mix in the cooked pasta and enjoy!
