- 2 oz semi-sweet chocolate chips
- 1/2 cup coconut oil
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
Preheat the oven to 350˚F. Line an 8 inch square pan with parchment paper and set aside.
In a microwave safe bowl, add the chocolate chips and coconut oil. Microwave in 30 second intervals, mixing until smooth.
Mix in the sugar. Add the eggs one at a time, mixing until combined. Mix in the vanilla extract. Fold in the flour, baking powder and salt.
Pour the batter into the prepared pan and bake in the preheated oven for around 30 minutes, or until a toothpick inserted comes out clean. Allow to cool completely before cutting into squares.
