Buffalo Chicken Quesadillas

- 1 Tbsp olive oil
- 1 medium chicken thigh, cubed
- salt and pepper
- 2 Tbsp hot sauce
- 1 Tbsp ranch dressing
- 1/2 medium green bell pepper, diced
- 1 cup shredded cheese, divided
- 4 flour tortillas
In a small skillet, heat the oil over medium heat. When the oil is hot, add in the chicken and season with salt and pepper. Cook until the chicken is no longer pink, around 5 minutes. Remove from heat.
In a small bowl, mix together the chicken, hot sauce and ranch.
Lightly spray a medium skillet with cooking spray. Place a flour tortilla on the skillet and heat over medium heat. Layer with 1/4 cup cheese, half of the chicken mixture, half of the diced green bell pepper, then another 1/4 cup of cheese. Place another flour tortilla on top and cook for around 3 minutes. Flip and cook for another 3 minutes or until lightly brown.
Repeat for the other quesadilla. Cut into 4 and enjoy!
