Summer Squash and Lemon Quinoa

Easy Summer Squash and Lemon Quinoa recipe. A quick and simple light dinner idea, it also works well as a gluten free side dish.

Ingredients

  • 1 Tbsp olive oil
  • 1 medium summer squash, diced
  • 2 1/2 cups water
  • 1 1/4 cup quinoa
  • 1/4 tsp salt
  • juice of 1 medium lemon
  • zest of 1 medium lemon
  • 1 Tbsp dried dill
  • 1/4 cup Parmesan, grated

Instructions

  • In a medium skillet, heat the oil over medium heat. Cook the summer squash until lightly browned on both sides. Pour onto a plate and set aside.
  • In the same saucepan, mix together the water, quinoa and salt. Bring to a boil and reduce to low and allow to simmer for around 15 minutes.
  • Mix in the lemon juice, lemon zest, dill and Parmesan. Serve immediately.
