Tofu Thai Green Curry

- 8 oz firm tofu, cubed
- 1 Tbsp olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 Tbsp fresh ginger, minced
- 2 Tbsp green curry paste
- 1 (400 mL) can coconut milk
- 1 Tbsp soy sauce
- 1 bunch kale, stems discarded and leaves chopped
Preheat the oven to 400ºF.
Line a baking sheet with parchment paper. Place the cubed tofu on the baking sheet in a single layer and bake in the preheated oven for 20-25 minutes.
Heat the oil in a large skillet. When the oil is hot, saute the onion for around 3 minutes.
Add in the garlic, ginger and curry paste and cook for around 3 minutes.
Mix in the coconut milk and soy sauce and bring to a boil. Reduce heat and simmer until thickened.
When the tofu is cooked, add it into the skillet along with the kale, and mix until the kale has just wilted. Serve with rice.
