- 3 medium ripe bananas
- 1 large egg
- 2/3 cup pumpkin puree
- 1 tsp vanilla extract
- 5 Tbsp butter, melted
- 1/3 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 cup chocolate chips
Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
In a large bowl, mash the bananas. Mix in the egg, pumpkin, butter and sugar until fully combined.
In a separate bowl, mix together the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
Pour the batter into the prepared loaf pan and place in the preheated oven for 55-65 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan before serving.
- This bread can be frozen for up to 3 months. Once the bread is fully cooled, transfer to a freezer bag and place in the freezer.
