Salted Olive Oil Brownies

- 1/4 cup mild olive oil
- 227 g milk chocolate, chopped
- 3/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 Tbsp instant coffee
- sea salt
Preheat the oven to 350˚F. Line an 8 inch square pan with parchment paper and set aside.
In a microwave safe bowl, heat the oil and chocolate in 30 second intervals, mixing until the chocolate is melted.
Mix in the sugar and vanilla. Beat in the eggs one at a time until fully incorporated. Slowly mix in the flour and instant coffee until just combined.
Pour the brownie mixture in the prepared pan and sprinkle with salt. Bake in the preheated oven for 30 minutes.
Allow to cool completely until cutting the brownies.
