Salted Olive Oil Brownies

Ingredients

  • 1/4 cup mild olive oil
  • 227 g milk chocolate, chopped
  • 3/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 Tbsp instant coffee
  • sea salt

Instructions

  • Preheat the oven to 350˚F. Line an 8 inch square pan with parchment paper and set aside.
  • In a microwave safe bowl, heat the oil and chocolate in 30 second intervals, mixing until the chocolate is melted.
  • Mix in the sugar and vanilla. Beat in the eggs one at a time until fully incorporated. Slowly mix in the flour and instant coffee until just combined.
  • Pour the brownie mixture in the prepared pan and sprinkle with salt. Bake in the preheated oven for 30 minutes.
  • Allow to cool completely until cutting the brownies.
