Chocolate Chip Banana Pecan Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk
  • 3 Tbsp salted butter, melted
  • 2 large eggs
  • 1 Tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 large banana, diced
  • 1/2 cup mini chocolate chips
  • 1/4 cup pecans, chopped

Instructions

  • In a medium bowl, mix together the flour, baking powder, baking soda and salt.
  • In a separate bowl, mix together the butter, milk, eggs, sugar and vanilla. Slowly add in the dry ingredients, mixing until fully combined. Fold in the bananas, chocolate chips and nuts.
  • Heat a large skillet over medium heat and spray with cooking
    spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.
