Chocolate Chip Banana Pecan Pancakes

- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk
- 3 Tbsp salted butter, melted
- 2 large eggs
- 1 Tbsp granulated sugar
- 1 tsp vanilla extract
- 1 large banana, diced
- 1/2 cup mini chocolate chips
- 1/4 cup pecans, chopped
In a medium bowl, mix together the flour, baking powder, baking soda and salt.
In a separate bowl, mix together the butter, milk, eggs, sugar and vanilla. Slowly add in the dry ingredients, mixing until fully combined. Fold in the bananas, chocolate chips and nuts.
Heat a large skillet over medium heat and spray with cooking
spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.
