Preheat the oven to 350˚F. Spray a loaf pan with cooking spray and set aside,
In a large bowl, mix together the flour, cornstarch, matcha, baking powder and salt.
In a separate bowl, whisk together the yogurt, sugar, vegetable oil, eggs and vanilla until fully combined.
Stir in the wet ingredients to the dry ingredients until fully combined.
Pour the batter into the prepared pan and bake for 50-55 minutes, or until a toothpick inserted comes out clean.
Let cool in the pan for 20 minutes, then remove to cool completely on wire racks.
