Mozzarella, Egg and Tomato English Muffin

- 1 large egg
- 1 english muffin
- 2 slices tomatoes
- 1/4 cup mozzarella
- salt and pepper to taste
Place the egg in a small saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Let the egg stand in the hot water for around 10 minutes.
Remove from hot water and place in a bowl of cold water.
Toast the english muffin. Peel the egg ad cut it in two. Assemble english muffin, and toast in the toaster oven until the cheese is melted.
