Preheat the oven to 350˚F. Line baking sheets wiht parchment paper and set aside.
In a medium bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt. Set aside.
In the bowl of a stand mixer, cream together the butter and brown sugar until light and fluffy. Add in the egg, coffee and molasses and mix until fully combined.
Slowly mix in the flour mixture until fully incorporated.
Place the granulated sugar in a small bowl.
Using a medium cookie scoop, form balls with the dough. Use your hands to roll into spheres, and roll the dough in the bowl of white sugar. Place the dough balls on the prepared baking sheets and bake for 10-12 minutes.
Remove from the oven and allow to cool on the pans for around 5 minutes, then transfer to wire racks to cool completely.
