Eggless Almond Butter Coconut Brownies

- 1/3 cup coconut flour
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup water (lukewarm)
- 1 Tbsp gelatin
- 1/3 cup hot water
- 1/2 cup stevia
- 3/4 cup almond butter
- 1/2 cup coconut oil, melted
- 1/2 tsp vanilla extract
Preheat the oven to 350ºF. Line an 8x8 square baking pan with parchment paper and set aside.
In a medium bowl, mix together the coconut flour, cocoa powder, baking soda and salt.
In a separate bowl, pour in the lukewarm water and sprinkle the gelatin on top. Allow to sit for 5 minutes.
Add the hot water in the gelatin mixture and whisk until the gelatin is dissolved. Add in the stevia and whisk until light and fluffy.
Mix the gelatin mixture, almond butter, coconut oil and vanilla into the dry ingredients until fully incorporated.
Pour the mixture into the prepared baking pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted comes out clean.
