Eggless Almond Butter Coconut Brownies

Ingredients

  • 1/3 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup water (lukewarm)
  • 1 Tbsp gelatin
  • 1/3 cup hot water
  • 1/2 cup stevia
  • 3/4 cup almond butter
  • 1/2 cup coconut oil, melted
  • 1/2 tsp vanilla extract

Instructions

  • Preheat the oven to 350ºF. Line an 8x8 square baking pan with parchment paper and set aside.
  • In a medium bowl, mix together the coconut flour, cocoa powder, baking soda and salt.
  • In a separate bowl, pour in the lukewarm water and sprinkle the gelatin on top. Allow to sit for 5 minutes.
  • Add the hot water in the gelatin mixture and whisk until the gelatin is dissolved. Add in the stevia and whisk until light and fluffy.
  • Mix the gelatin mixture, almond butter, coconut oil and vanilla into the dry ingredients until fully incorporated.
  • Pour the mixture into the prepared baking pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted comes out clean.
