Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, mix together the oats, flour, baking powder, salt and cinnamon.
In a separate bowl, whisk together the egg, coconut oil, vanilla and maple syrup until fully combined.
Slowly mix in the dry ingredients into the wet ingredients until fully incorporated. Fold in the chocolate chips and chocolate chunks.
Scoop the dough onto the prepared baking sheet, and bake for 12-15 minutes, or until the edges begin to brown.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
