Healthy Oatmeal Chocolate Chunk Cookies

Ingredients

  • 1 1/2 cups old fashioned oats
  • 3/4 cup whole wheat flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 large egg
  • 2 Tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 cup pure maple syrup
  • 1/2 cup chocolate chunks
  • 1/2 cup chocolate chips

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, mix together the oats, flour, baking powder, salt and cinnamon.
  • In a separate bowl, whisk together the egg, coconut oil, vanilla and maple syrup until fully combined.
  • Slowly mix in the dry ingredients into the wet ingredients until fully incorporated. Fold in the chocolate chips and chocolate chunks.
  • Scoop the dough onto the prepared baking sheet, and bake for 12-15 minutes, or until the edges begin to brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
