- 16 oz rotini pasta
- 1 lb asparagus, trimmed and cut into 1 inch pieces
- 1 medium lemon, zested and juiced
- 1/4 cup Parmesan cheese
- 1/2 cup white cheddar
- 1/4 cup salted butter
- 1/4 cup light olive oil
- 1/4 tsp ground black pepper
In a medium saucepan, cook the pasta in salted water for around 7 minutes. The pasta should still be firm. Add in the asparagus, and cook until the asparagus can be pierced with a fork. Drain.
Add in the lemon juice, lemon zest, Parmesan, cheddar, butter, olive oil and black pepper and mix well. Serve immediately.
