- 1 cup water
- 1/4 cup pitted dates, finely chopped
- 3 Tbps salted butter, softened
- 1 1/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 cup chocolate chips
In a small saucepan, bring the water and the dates to a boil. Reduce the heat, and allow to simmer for 20 minutes. Most of the water should have evaporated.
Preheat the oven to 325˚F. Line 2 baking sheets with parchment paper and set aside.
In a medium bowl, beat together the butter, sugar and date mixture until fully combined. Mix in the egg and vanilla.
Add in the flour and baking soda, and mix until fully incorporated. Fold in the chocolate chips.
Using a cookie scoop, scoop the dough on the prepared baking sheets and bake in the preheated oven for 12-14 minutes.
Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
