Vegan Chocolate Maple Syrup Muffins

Simple Vegan Chocolate Maple Syrup Muffins that are easy to make, and healthier than your average muffin. Dense and chewy, and refined sugar free.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1 cup pure maple syrup
  • 3/4 cup milk of choice
  • 1/3 cup olive oil
  • 2 tsp vanilla extract

Instructions

  • Preheat the oven to 350˚F. Line muffin pan with paper liners.
  • In a medium bowl, combine the flour, cocoa, baking powder and salt.
  • In a separate bowl, with an electric mixer, mix together maple syrup, milk, oil and vanilla.
  • Slowly add the wet ingredients to the dry ingredients, mixing until fully incorporated.
  • Pour the batter into the lined muffin pans, and bake for around 12 minutes, or until a toothpick inserted comes out clean.
