Whole Wheat Gingerbread Pancakes

Ingredients

  • 1 1/4 cups whole wheat flour
  • 1/3 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 large egg
  • 2 cups milk
  • 2 tsp vanilla extract
  • 3 Tbsp butter

Instructions

  • In a medium bowl, mix together the flours, sugar, baking powder, cinnamon, ginger, cloves, and nutmeg.
  • In a separate microwave-safe bowl, melt the butter. Whisk in the egg, milk and vanilla.
  • Slowly mix in the wet ingredients with the dry ingredients until fully incorporated.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.
