Maple Muffins
These maple muffins are made with pure maple syrup. One of my favourite nut free recipes, they make a great breakfast idea.

- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp shortening
- 1 Tbsp salted butter, cold and cut into cubes
- 1/4 cup rolled oats
- 2 Tbsp unsweetened applesauce
- 1 large egg
- 1/2 cup milk
- 2/3 cup maple syrup
Preheat the oven to 400°F. Line a muffin tin with 12 paper liners and set aside.
In a medium bowl, mix together the flour, sugar, baking powder and salt. Cut in the shortening and butter until it resembles fine crumbs. Mix in the oats.
In a small bowl, mix together the applesauce, egg, milk and maple syrup. Add into the dry ingredients, and mix until just combined.
Divide the batter into the prepared muffin tin, and bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
