Maple Muffins

These maple muffins are made with pure maple syrup. One of my favourite nut free recipes, they make a great breakfast idea.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp shortening
  • 1 Tbsp salted butter, cold and cut into cubes
  • 1/4 cup rolled oats
  • 2 Tbsp unsweetened applesauce
  • 1 large egg
  • 1/2 cup milk
  • 2/3 cup maple syrup

Instructions

  • Preheat the oven to 400°F. Line a muffin tin with 12 paper liners and set aside.
  • In a medium bowl, mix together the flour, sugar, baking powder and salt. Cut in the shortening and butter until it resembles fine crumbs. Mix in the oats.
  • In a small bowl, mix together the applesauce, egg, milk and maple syrup. Add into the dry ingredients, and mix until just combined.
  • Divide the batter into the prepared muffin tin, and bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
