Cream of Potato and Ham Soup
This Cream of Potato and Ham Soup is so easy to make! This is the perfect recipe to use your leftover Thanksgiving or Christmas ham.

- 4 cups potatoes, peeled and cubed
- 2 cups water
- 2 cups vegetable broth
- 2 medium carrots diced
- 2 stalks celery, chopped
- 1 large onion, diced
- 1/2 cup salted butter
- 1/2 cup all-purpose flour
- 1 tsp salt
- 2 cups milk
- 2/3 cup cheddar cheese, shredded
- 2 cups ham, cubed
In a large saucepan, cook the potatoes, water, vegetable broth, carrots, celery and onion on medium heat until the potatoes are tender.
Meanwhile in a medium saucepan, melt the butter on medium heat. Whisk in the flour and salt for around 1 minute. Add in the milk, and mix until thickened. Add in the cheese and ham, and mix together until the cheese has melted.
Pour the cheese mixture into the vegetable soup and mix until fully incorporated. Allow to simmer until ready to serve.
