Strawberry Apple Muffins

These Strawberry Apple Muffins are like a cross between Summer and Fall. Spiced with cinnamon and nutmeg, this recipe makes the perfect breakfast or snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 large apple, peeled, cored and cubed
  • 1/2 cup strawberries, diced

Instructions

  • Preheat oven to 375˚F. Line muffin pan with paper liners, or lightly spray a muffin pan.
  • In a medium bowl, combine the 2 cups flour, baking powder, baking soda, salt, 1 teaspoon cinnamon and nutmeg.
  • In a large bowl, cream together the 1/2 cup butter, 1/2 cup brown and white sugar until light and fluffy. Add the eggs and vanilla and beat well. Slowly add the flour mixture, mixing until fully incorporated. Fold in the apples and strawberries.
  • Spoon the batter into the prepared muffin pans.
  • Bake for around 15 minutes, or until a toothpick inserted comes out clean. Place on wire racks to cool completely.
