Quinoa Bell Pepper Omelette

Ingredients

  • 1 large egg yolk
  • 1 large egg
  • 1/4 tsp seasoning salt
  • 1 small bell pepper, cubed
  • 1/4 cup cooked quinoa
  • 1 Tbsp oil

Instructions

  • In a small bowl, beat together the egg yolk and the egg. Mix in the salt, bell pepper and quinoa.
  • Heat the oil on a medium skillet over medium heat. Pour the egg mixture over the skillet, and flip after 3-4 minutes. After another 3-4 minutes, remove from heat.
