Oat and Coconut Protein Bars

Ingredients

  • 1 Tbsp graham cracker crumbs
  • 1 large egg
  • 1 Tbsp ground cinnamon
  • 3/4 cup sweetened shredded coconut
  • 1/4 cup honey
  • 1 scoop vanilla whey protein powder
  • 1/2 cup oats

Instructions

  • Preheat the oven to 350˚F 
  • In a medium bowl, mix together the oats, 1/2 cup coconut, protein powder, graham cracker crumbs and cinnamon until fully combined. 
  • In a small bowl, mix together the egg and honey. 
  • Slowly mix in the wet ingredients into the dry ingredients until fully incorporated. 
  • Line a 8x8 square baking pan with aluminum foil. Pack the mixture into the prepared baking pan, and bake in the preheated oven for 15 minutes. Remove and sprinkle with the remaining 1/4 cup coconut and bake for an additional 5 minutes. 
  • Let cool and cut into bars.
