Oat and Coconut Protein Bars

- 1 Tbsp graham cracker crumbs
- 1 large egg
- 1 Tbsp ground cinnamon
- 3/4 cup sweetened shredded coconut
- 1/4 cup honey
- 1 scoop vanilla whey protein powder
- 1/2 cup oats
Preheat the oven to 350˚F
In a medium bowl, mix together the oats, 1/2 cup coconut, protein powder, graham cracker crumbs and cinnamon until fully combined.
In a small bowl, mix together the egg and honey.
Slowly mix in the wet ingredients into the dry ingredients until fully incorporated.
Line a 8x8 square baking pan with aluminum foil. Pack the mixture into the prepared baking pan, and bake in the preheated oven for 15 minutes. Remove and sprinkle with the remaining 1/4 cup coconut and bake for an additional 5 minutes.
Let cool and cut into bars.
