Apple Streusel Muffins

These moist Apple Streusel Muffins are a great great grab and go breakfast recipe. Flavoured with cinnamon and made with both shredded and cubed apples.

Ingredients

Muffins

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 large apple, peeled and cored (3/4 shredded, 1/4 cut into cubes)

Streusel Topping

  • 1/3 cup brown sugar
  • 1 Tbsp all-purpose flour
  • 1/4 tsp ground cinnamon
  • 1 Tbsp salted butter, melted

Instructions

  • Preheat oven to 375˚F. Line muffin pan with paper liners, or lightly spray a muffin pan.
  • In a medium bowl, combine the 2 cups flour, baking powder, baking soda, salt, 1 teaspoon cinnamon and nutmeg.
  • In a large bowl, cream together the 1/2 cup butter, 1/2 cup brown and white sugar until light and fluffy. Add the eggs and vanilla and beat well. Slowly add the flour mixture, mixing until fully incorporated. Fold in the apples.
  • Spoon the batter into the prepared muffin pans.
  • In a small bowl, combine the streusel topping ingredients together. Sprinkle over the muffins.
  • Bake for around 15 minutes, or until a toothpick inserted comes out clean. Place on wire racks to cool completely.
