Black Bean Brownie

Easy sugar free Black Bean Brownies are gluten free, refined sugar free and vegan. Made with oats, maple syrup and vegan chocolate chips.

Ingredients

  • 1 1/2 cups cooked black beans (or a 15-oz can, drained and rinsed)
  • 2 Tbsp unsweetened cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/2 cup pure maple syrup
  • 1/4 cup canola oil
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup mini chocolate chips
  • more chocolate chips for topping (optional)

Instructions

  • Preheat oven to 350˚F. Lightly grease an 8×8 baking pan and set aside.
  • Combine all ingredients except the chocolate chips in a food processor, and blend until completely smooth.  
  • Stir in the chocolate chips, then pour into the prepared baking pan. Optional: sprinkle extra chocolate chips over the top. 
  • Bake the brownies in the preheated oven for 15-18 minutes, then let cool at least 10 minutes before cutting into squares.
