Ginger Nectarine Baked Oatmeal
This Ginger Nectarine Baked Oatmeal is my all time favourite baked oatmeal recipe. So easy to make, and can easily be made vegan.

- 3 cups quick cooking oats
- 2/3 cup brown sugar
- 1/3 cup whole wheat flour
- 1 tsp ground ginger
- 2 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 2 cups milk of choice
- 1/4 cup canola oil
- 1 tsp vanilla extract
- 2 medium nectarines, diced
Preheat the oven to 350˚F. Lightly grease a 9×13 inch baking dish and set aside.
In a medium bowl, whisk together all of the ingredients, except the nectarines. Gently fold in the diced nectarines and pour into the prepared baking dish.
Bake in the preheated oven for 25-30 minutes, or until set in the middle.
