Jalapeno Popper Grilled Cheese Sandwich

Grilled cheese sandwich with roasted jalapenos and cream cheese. The only thing missing from this jalapeno popper grilled cheese sandwich is bacon bits!

Ingredients

  • 2 large jalapeno peppers, cut in half lengthwise
  • 1 Tbsp cream cheese
  • 2 slices bread
  • 1/3 cup mozzarella cheese, shredded
  • 1/3 cup cheddar cheese, shredded
  • 1 Tbsp salted butter

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with a silicone baking mat or parchment paper.
  • Place the jalapenos on the baking sheet with the skins facing up, and bake in the oven for 10-15 minutes, or until the jalapeno skins are blistered.
  • Remove the seeds from the jalapenos. I left the skins on mine, but if you wanted to remove them, place the jalapenos in a ziplock bag for a couple of minutes (around 5). The skins should be a little easier to remove. If you like, you can cut the jalapenos into smaller pieces so that it’s easier to spread around your sandwich.
  • Spread the cream cheese on one piece of bread, and sprinkle the cheeses on top. Place your roasted jalapenos on top, and sandwich the two pieces of bread together.
  • Butter both sides of the bread, and place the sandwich on a medium skillet. Heat the sandwich on medium heat until the cheese is melty (I like to put a saucepan lid on top to help the process). Flip the sandwich, and heat the other side until the bread is golden. Serve immediately.
